Oh Boy! Baby Shower Cake

A baby shower cake for a Mom-to-be. I guess you can guess what she is expecting. This is a white chocolate cake, decorated with buttercream icing and gum paste fondant. 8"x8", 2 layers for a group of 20. Oh Boy.... here is the recipe:

- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 6 (1 ounce) squares white chocolate, chopped
- 1/2 cup hot water
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 3 eggs
- 1 cup buttermilk

From Miss to Mrs.....

This lemon white cake is decorated in a bridal theme. I added a bit of vanilla extract to the buttercream icing. 3 layers with fondant icing. I added gumpaste carnations. Here's the recipe found from The Joy of Baking:

Lemon Cake Recipe:
- 1 cup unsalted butter, room temperature

- 1 cup granulated white sugar

- 4 large eggs

- 1 teaspoon pure vanilla extract

- Zest of 1 large lemon

- 2 cups all purpose flour

- 2 teaspoons baking powder

- 1/4 teaspoon salt

- 1/4 cup fresh lemon juice

Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Butter, or spray with a nonstick spray, a 9 inch (23 cm) spring form pan and then line the bottom of the pan with parchment paper. Set aside.

In the bowl of your electric mixer

(or with a hand mixer) beat the butter and sugar until light and fluffy and pale in color (about 3 minutes). Add the eggs, one at a time, mixing well after each addition. Beat in the vanilla extract and lemon zest.

Sift together the flour, baking powder and salt and then add to the batter along with the lemon juice. Mix only until incorporated.

Pour the batter into the prepared pan, smoothing the top with an offset spatula. Bake about 40 - 45 minutes, or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool, then gently remove the sides of the pan.
This cake will keep for several days in an airtight container

Makes one - 9 inch (23 cm) cake

Mexican Chocolate Cake

A partial photo op, of a Mexican Chocolate Cake that I baked and decorated. I have never tasted this before, and a customer requested. OMG! This was absolutely delicious. Chocolate with a kick! I smoothed buttercream icing, and added fondant. I added a gumpaste flower as a finishing touch.

Here is the recipe:
Mexican Chocolate Cake (Makes 12 servings)

- 1(18 1/4 ounce) chocolate cake mix, prepared according to package directions
- 3 eggs
- 1 cup water
- 1/3 cup oil
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground red pepper
- 1 tablespoon balsamic vinegar

Stir the cinnamon, ground red pepper, and balsamic vinegar into the cake batter then pour into the prepared pan.

Bake for 35 to 40 minutes, or until a wooden toothpick inserted in the center comes out clean.

Let cake cool for 15 minutes then remove to a wire rack to cool completely.

Buttercream Icing (makes 3 cups):
- 1/2 cup solid vegetable shortening
- 1/2 cup (1 stick) butter or margarine softened
- 1 teaspoon clear vanilla extract
- 4 cups sifted confectioners' sugar (approximately 1 lb.)
- 3 tablespoons water

To turn this into a medium consistency (to ice your cake)for every cup of icing, add 1 teaspoon of water

fondant is optional.

A Very Naughty Cake

Well, I guess it was bound to happen. A friend of mine referred me to someone who is having a 40Th birthday party this weekend. Within her theme, she wanted the party to have a stagette feel. She wanted to have a cake which would transcend her theme. She wanted -- (wait for it) -- a PENIS cake.

I decided that I could take on this hard (ahem), I mean difficult task. I wanted it to be tasteful. (Is it just me or do many of my words have a double entendre in this post?)

My interesting take on this penis cake was created using a boxer short theme with fondant. The cake, is vanilla. The recipient's name is Juanita, and her nickname is Chola.

Little Mermaid For a Three Year Old

My Niece's birthday cake. She Loves anything with The Little Mermaid. The 3 year old diva insisted that it be red velvet. I really enjoyed the making this.

Once the cake is cut, the contrast of the red velvet colour against the blue fondant will be striking!

Chocolates For Sweet Sixteen

Thanks to my co-worker Michelle who gave me the opportunity to create some Spring themed chocolates for her daughter's sweet sixteen party. The were my famous couveture chocolates piped with buttercream icing.
They were molded as Easter lilies, and butterflies and each one of them were hand painted. I packaged and labelled them. I am quite pleased with how they turned out.


Update: Michelle got back to me and said -
"oh the kids loved them ,,It big sell off ,THANK YOU .."
